Tonight I made some Coconut Almond Candy. To make this, you will need:
*1 cup of shredded coconut (I am using Tropical Traditions organic, unsweetened 100% coconut).
*3 tablespoon of dark organic honey
*3 tablespoons of coconut oil (Tropical Traditions organic pure coconut oil)
*A handful of almonds
I first melted the coconut oil and then I added the coconut oil to the shredded coconut (in a bowl). I then added the honey to the mixture. Using candy molds, I put an almond in each mold and then pressed the mixture down into it. When I am ready to eat it, I flip the mold upside down. On the right hand side of the photo, you can see what it looks like flipped over and out of the mold. To store, I leave them in my silicone candy molds and keep in the refrigerator.
This dessert is pretty rich so I only eat 1 or 2 at a time. My husband is not a fan of coconut, but this dessert has his stamp of approval so I will be making this again.
